These gluten-free pizza bites are made in 30 minutes (prep time included) and a great way to sneak in some vegetables in your snack.... They taste awesome and will keep you satisfied as they will not trigger your blood sugar.
It's a great portable snack that you can bring to a party, picnic, work or just enjoy at home.
INGREDIENTS:
1/2 cup almond flour (not almond meal but almond flour which has less fat and a more flour-like consistency)
2 TBSP hemp flour + 1 TBSP coconut flour
2 large eggs (or flax eggs for vegan version)
4 TBSP olive oil
Sea salt, garlic, basil, thyme, oregano to taste
1 bell pepper already grilled in the oven
4-6 scallions
1 handful olives
125g mozzarella or silken tofu (that's usually 1/2 package)
optional: top with tomato slices
1 tsp baking soda
dash of apple cider vinegar
PREPARATION:
preheat your oven @175°C
take off skin and seeds from your pepper
wash scallions and cut all your veggies in small pieces
drain tofu or mozza, if using mozza, shred or cut in small pieces as well
mix flour and spices, baking soda and add eggs, olive oil and tofu or mozza. Mix well and add in your cut vegetables
form small patties and put on a tray or silicone pad in the oven
bake for 15-20 minutes or until firm
